Satisfying Chocolate Chip Oat Energy Bites

 

The Story

Health has always been a big passion of mine, but that doesn’t mean I’ve always had it figured out. For years, I thought being “healthy” was all about extremes—cutting out entire food groups, logging every bite I ate, and feeling guilty about indulging in a cookie or two. I used to treat health as this black-and-white concept: you’re either doing everything perfectly, or you’re not doing it at all.

It wasn’t until recently that I realized health is so much more than what’s on your plate or how many steps you’ve taken. It’s about feeling good in your body, taking care of your mind, and finding a balance that works for you. Some days, that looks like a kale salad and an energizing workout. Other days, it’s sleeping in, having pancakes for breakfast, and watching your favorite comfort show. Both days are equally valid.

One of the ways I’ve learned to embrace that balance is through baking. It’s my way of blending two worlds—creating something that feels indulgent while still nourishing my body. Take these chocolate chip oat energy bites, for example. They’re packed with healthy fats, fibre, and natural sweetness, but they also taste like cookie dough, which makes them feel like a treat. They’re the perfect snack for when I want something quick, satisfying, and a little bit special.

For me, health isn’t about perfection anymore. It’s about consistency, flexibility, and remembering that small, intentional choices add up over time. These energy bites are a great example of that—simple, wholesome, and just the right mix of healthy and fun.


Ingredients:

  • 1 1/2 cups rolled oats
  • 1/2 cup almond butter (or peanut butter)
  • 1/3 cup honey or maple syrup
  • 1/4 cup ground flaxseed
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup mini chocolate chips
  • 2 tablespoons chia seeds (optional)

Instructions:

  1. Combine the Ingredients:
    In a large bowl, stir together the oats, almond butter, honey, flaxseed, vanilla extract, cinnamon, and chia seeds (if using). Mix until well combined. The mixture should hold together when pressed; if it feels too dry, add a little more almond butter or honey.

  2. Add the Chocolate Chips:
    Gently fold in the mini chocolate chips, distributing them evenly throughout the mixture.

  3. Shape the Bites:
    Scoop out tablespoon-sized portions of the mixture and roll them into balls. Place the bites on a parchment-lined baking sheet or plate.

  4. Chill:
    Refrigerate the energy bites for at least 30 minutes to firm up. Once set, transfer them to an airtight container for storage.


Tips:

  • These bites can be stored in the fridge for up to a week or in the freezer for up to a month—perfect for meal prep!
  • Swap the almond butter for sunflower seed butter to make them nut-free.
  • You can customise these with mix-ins like dried fruit, coconut flakes, or chopped nuts for added variety.
