Growing up, I was always the one trying to make everyone laugh. Ingredients:
- For the Crust:
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, softened
- For the Lemon Filling:
- 3 large eggs
- 1 1/2 cups granulated sugar
- 1/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 cup freshly squeezed lemon juice (about 2-3 lemons)
- 1 tablespoon lemon zest
- For Topping:
- Powdered sugar (the real deal!)
Instructions:
1. Make the Crust:
Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking pan.
In a medium bowl, mix the flour, sugar, and softened butter until a crumbly dough forms. Press the dough evenly into the bottom of the prepared pan.
Bake for 15-18 minutes, or until lightly golden. Remove from the oven and let it cool slightly.
2. Make the Lemon Filling:
In a separate bowl, whisk together the eggs, sugar, flour, and baking powder until smooth. Stir in the lemon juice and lemon zest.
Pour the lemon mixture over the pre-baked crust.
3. Bake the Lemon Bars:
Return the pan to the oven and bake for an additional 20-25 minutes, or until the filling is set and no longer jiggly in the center.
Allow the bars to cool completely in the pan before cutting into squares.
4. Add the Finishing Touch:
Just before serving, dust the lemon bars generously with powdered sugar. Make sure it’s the real thing this time—no pranks allowed!
Tips:
- To get the most juice out of your lemons, roll them on the counter with your palm before cutting them in half. This helps break down the fibers and releases more juice.
- If you like your lemon bars extra tart, feel free to add a bit more lemon zest for a punchier flavor.
