The Story
If there’s one thing I’ve mastered over the years, it’s procrastination. I’ll admit it—I’m the queen of “I’ll do it later.” Whether it’s starting a project, cleaning my room, or even getting ready for an event, I somehow always find myself doing things at the last possible minute. It’s not that I don’t *want* to get things done; I just have this special talent for finding 100 other little distractions that seem way more interesting at the time.
One particular evening, I had an essay due the next day, and I told myself I’d sit down and knock it out. But somehow, I ended up in the kitchen, convincing myself that baking was totally the way to get my creative juices flowing. After all, who can focus on an empty stomach?
That’s how I ended up making snickerdoodle blondies in the middle of my essay-writing session. What started as a quick snack break turned into a full-on baking project (naturally), but by the end of it, I had these warm, cinnamon-sugar blondies ready to go. And while I may have procrastinated a little more than I planned, at least I had a delicious treat to get me through my late-night writing frenzy.
The essay got done, eventually. But these snickerdoodle blondies? They were the real win of the night.
Ingredients:
- 1 cup unsalted butter, melted
- 1 1/2 cups packed brown sugar
- 2 large eggs
- 1 tablespoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 tablespoon ground cinnamon
- 1/4 cup granulated sugar (for topping)
- 1 teaspoon ground cinnamon (for topping)
Instructions:
1. Preheat the Oven:
Preheat your oven to 350°F (175°C) and grease or line a 9x13-inch baking pan with parchment paper.
2. Mix the Wet Ingredients:
In a large bowl, whisk together the melted butter and brown sugar until smooth. Add the eggs and vanilla extract, mixing until fully incorporated.
3. Combine the Dry Ingredients:
In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
4. Mix Everything Together:
Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
5. Spread the Batter:
Pour the batter into the prepared baking pan and spread it out evenly.
6. Make the Topping:
In a small bowl, mix together the granulated sugar and cinnamon. Sprinkle this cinnamon-sugar mixture evenly over the top of the blondie batter.
7. Bake:
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let the blondies cool in the pan before cutting them into squares.
Tips:
- For an extra-caramelized flavor, let the melted butter cool for a minute before adding it to the sugar.
- If you love a bit of crunch, toss in some chopped walnuts or pecans to the batter before baking.
- Store these blondies in an airtight container—they actually taste even better the next day when the flavors have had time to settle!
